Maybe I am a little weird...

but typing is a whole more fun when your finger nails are freshly painted.


I didn't get to share on Thursday, but I had a DELICIOUS veg lunch from the culinary department of Dater, the adjoining school to the one I am teaching. It was a salad bar and vegetarian minestrone for only $6. 


Don't mind that the salad is half eaten - I was already diggin' in before I thought to snap a picture. The chef and students in the culinary arts class are seriously so talented. Everything I have eaten from there is so delicious, and they ALWAYS offer a vegetarian option. A couple weeks ago they had a portabella soup and omg. It was delicious. 


Today, Nick and I took Guillermo to the vet to get his little stitches removed. Other than being so so scared, he did really well! Everyone said he looked pretty chubby (from laying around so much!) but other than that, he is healing up nicely and they vet said it will take a whole month before he starts getting comfortable using his leg completely. Poor little guy.

Before the vet, Nick and I traveled to St. Bernard to have a consultation about getting dreads in his hair. Then we went to Kroger for some Starbucks - I had a Peppermint Mocha Latte and Nick had a Gingerbread Latte. They were both so delicious, in part because of the pretty red holiday cups! 


After Starbucks, we walked over to WaldenBooks and picked up the second Harry Potter in paperback so that I could keep reading! I have all of the books in hardcover, but after reading some of them them 8-10 times (during gradeschool/high school), there are a few that are completely falling apart and utterly non usable. SO! Perfect excuse to gift myself the paperback collection, too! 


P.S. Those glasses I am wearing? New! I can't find a great picture, or really take one of myself because of the light in this apartment, but I love them! They are two shades of purple, and so so pretty.

Saturday Haps and Sunday Letters

I still never remembered the second story that I wanted to post about yesterday. Big surprise. I had the posts all planned out in my head. Where I would research, etc. And POOF! Just like that. Half of it gone.

Today has been fantastic so far. Nick, Guillermo, and I stayed in bed until about noon, then we made our way (minus one puppy) to brunch, and then to Kroger. We were out of a lot of puppy essentials, so that trip ended up being a little more than we [Nick] wanted it to be, but so is life. Life with a puppy son. While we were at Kroger, I also picked up a few fresh raspberries, strawberries, and... these!! For the homemade guacamole recipe I shared with you oh-so-long ago. Check out the full post here!


Here's the recipe again if you're curious. Nick says it's better than Chipotle's :)

2 avocados, diced
1 small tomato, diced
1/3 of a red onion, diced
1 tsp (or more!) of diced chilis
1/4 tsp garlic powder
1/4 tsp salt and pepper
1 tbsp fresh cilantro
1/2 of a lime, squeezed

Accompany with your favorite (corn) tortilla chips! Yum!


We ended up not going to the homecoming game like I had originally planned last night, and instead went to the Hofbrauhaus for dinner with our friend Kas. I had a plain old salad and their potato pancake (omg yum) and Nick had some delicious looking meat-filled club. I still haven't gotten him to go off of meat ;) I was the DD since I haven't been able to warm up to alcohol again since my birthday (yes, folks, this was back in July). I just can't bring myself to enjoy the taste. STILL. Unless it's wine.

Anyway, after dinner, we scooped up Guillermo and went to another friend's house for a bonfire. Guillermo had so much fun relaxing on my lap in front of the warm fire. And he looked oh-so-cute in his sweater :)


I also painted my nails yesterday! I haven't done this in SOLONG. I used one of my favorites - 'Navy Baby' by Sally Hansen. It's from the SALON Nail Lacquer line, and it's amazing. It goes on perfectly in one coat and lasts forever. The only downside is that if you don't use a base coat (and sometimes even when you do) it can stain your nails pretty badly.

Sunday Letters

This week's letter goes to my parents! 


Dear Mom and Dad, 

You guys are probably the best parents a girl could ask for. I can't imagine having a better childhood. I always had everything I could ever want (you could say I was spoiled) and until Tony came along, you guys were my best friends. THEN I got a brother and a baby sister out of the deal! I can't say how thankful I am for them - and you! You guys have always helped me whenever I needed it - especially lately. Thanks for that. You're the first one's I go to for advice or when I'm upset, and I don't think I could ask for better psychologists ;) I love you guys SOMUCH. Thanks for being the best :)

On Vegetarianism and Baseball



Happy World Vegetarian Day, everyone! Today is World Vegetarian Day, and this is really exciting. First of all, vegetarianism has come a long way to be able to have it's very own day. Secondly, it's nice having one more day to celebrate something in a year, no matter what it is :) Read about World Vegetarian Day here. This past Tuesday was Hug a Vegetarian Day! So exciting. I just learned about all of these things, and they are so fun to read about. I have so many friends who are vegan/vegetarian/healthy eaters overall who can really appreciate this, including Morgan from Blackbird Fly, so please stop by and check out her veg post here! So, yay! I am so excited about this weekend because my principal gave me four free tickets to the Reds game. Obvs, I will be using two to take Nick and I to the game, and since they are not in sequence (meaning there's a slim chance we'd all four be together, should I take two others) I probably will try to sell/give away the remaining two. I haven't been to a Red's game since I was about 12, so this should be really fun! I am not a huge sports fan, but I have always been a firm believer that baseball is much more fun to watch in person than it is to watch on TV or listen to on the radio.



Sunday marks the first night of our new weekly tradition, Sunday Dinner. I plan on blogging about this each week (good idea, Mom!) and taking loads of pictures. The only thing THIS picture is missing is Nick! (Speaking of whom, I plan to do a complete post on this lovely man sometime in the near future.) So, after the game on Sunday (which Nick still doesn't know he's going to) we will be heading over to my parent's house to have dinner. My mom always makes something delicious for me (vegetarian style) and I can't wait to find out what it is this week!

Speaking of all things vegetarian, one of my students found out that I am, today, and has since taken to calling me "Lil' Veggie." HAHA. This makes me laugh every single time. I seriously love my kids. I know that I spend a lot of time complaining about my placement, but just because the situation is not completely ideal does not mean that I don't have some seriously amazing kids that I spend every day with. They always make me laugh, and sometimes make me SO angry I could scream. Both happen on a pretty daily basis, but it's usually worth it. Those who know me will know that this is a huge shift from how I felt earlier this week.

Today I get to spend the day in a few other teacher's rooms observing. I love my classroom, but it's probably a good idea to get to know what it's like in other parts of the building. Since my mentor is so different, it will be nice getting another perspective! It was also nice getting two plan bells today, and since one of them ran together for lunch, I had time to stop home and visit Nick and Guillermo before finishing the day:



Speaking of loving my kids, they are completely taking off with the Literary Analysis paper about The Catcher in the Rye. A few of them have even turned it in already, and it's so interesting reading their perceptions of the novel. I wish I had gotten to write this paper in high school or college! Veg Vagabond





Being a teacher, kids often find out little bits and pieces about my life, and want to more. So, naturally, they ask lots of questions. Among these being: Do you have kids? Are you married? Do you have a boyfriend? Do you like to party? (They ask this when they find out that I am a college student, earning my degree to become a full time teacher). And the question that I get most often is…. You don’t eat meat?! At all?!

After four weeks of this, it made me think, again, about why I am a vegetarian, and what a big part of my lifestyle it has become. It’s second nature, now, but when I stop and think about it, it is actually really important to me.

I still haven’t been able to bring myself to re-watch those PETA videos I saw back in 6th grade. I am sure they haven’t changed a bit, and they are still the reason I stopped eating meat. Regardless, I have learned so much. Originally, I stopped eating meat in high school because of the lovely cruelty-free aspect. Always having been an animal lover, this was a pretty clear and easy choice for me. It was not, however, and easy choice made by me for my parents. This began sophomore year of high school and my dad had NO idea what to buy for me. Bless his heart, he tried so hard, but even I had little information about what a true vegetarian ate. So, he began to buy all things Boca. To this day I think that Boca is vomitatious. On the same token, my mom refused to let me stop eating meat unless I kept fish in my diet. She said “You’ll never be able to get enough protein to stay healthy without at least fish…” So, I listened to her, and until recently, fish has been a part of my diet. And it’s always been a little hard for me to hear people discrediting my choices because ‘“real” vegetarians don’t eat fish because fish is meat.’
To say the least, my vegetarianism didn’t last much longer than a few months. It was hard, and the temptation was strong. I left it alone for a while and revisited it a few years later. I didn’t eat meat for two years, and then began feeling utterly exhausted and completely fatigued at all times… so I though perhaps it was my diet. While I was making better choices and was better equipped (being an independent college student) to make these choices, I still was not well informed. I reverted to eating meat, again. This lasted for a few months, and I soon realized how gross, dirty, grimy, and awful about myself it made me feel at all times. AGAIN, I decided to cut meat out. My fickle relationship with vegetarianism has led me to the point that I am in my life now…
I have learned so much about my lifestyle choice – which is what it is – a complete lifestyle change. I have learned the way that all animals that produce consumable products are treated, and how that affects what ends up on (not necessarily mine, per se) MY plate. I learned that often they are sick, too weak to walk, and laden with bacteria and disease when they arrive at the slaughterhouses. I learned that fish are made to swim in tiny spaces filled with disgustingly disgusting water. I learned (more) about chickens and the amount of them that one person consumes in their lifetime, and how they are raised… and even the conditions that they are forced to produce eggs.

Not only have I chosen vegetarianism for myself as a way to support the well being of these animals that deserve to be treated with respect, but I have also chosen it to become a healthier person. After doing this project (where I learned the sheer number of types of vegetarians that exist, and omg!) I have made many changes to my diet, and I have even become more attentive to my protein consumption. I feel better about being a healthier and more astute and aware about the world around me. More importantly, after talking with Nick, I am pretty sure (not anytime soon by ANY means) that a completely vegan lifestyle is in my future. We’ll see when that decision comes, it’s a big one, and it means cutting out my addiction to cheese, but I feel that it’s probably the path that I am headed down at this rate. ;)

Just to show that vegetarian food can still be delicious tasting AND enticing, I thought I would show a few yummy looking meals that are veg friendly :)



If you're thinking about going veg, one of my favorite favorite favorite healthy and fresh snack is homemade guacamole. Here's the recipe for you to try at home!
